Weight Watcher's General Tso's Chicken

I got this recipe off the Weight Watchers website a couple of years ago. I make it a couple of times a month, it's so good. Of course, I do put in more red pepper than the recipe calls for, sometimes, too much....oh well. Andy loves it too.

3/4 cup canned chicken broth, reduced-sodium
2 Tbsp cornstarch
2 Tbsp sugar
2 Tbsp low-sodium soy sauce
1 Tbsp white wine vinegar
1/2 tsp ground ginger
2 tsp peanut oil
2 medium scallion(s), chopped
2 medium garlic clove(s), minced
1/2 tsp red pepper flakes, or 1 dried chili pepper, minced
1 pound uncooked boneless, skinless chicken breast(s), cut into 2-inch pieces
2 cup cooked white rice, kept hot

In a medium bowl, whisk together broth, cornstarch, sugar, soy sauce, vinegar and ginger; set aside. Heat oil in a wok or large skillet over medium-high heat. Add scallions, garlic and pepper and cook 2 minutes. Add chicken and cook until browned all over, about 5 minutes. Add reserved sauce and simmer until sauce thickens and chicken is cooked through, about 3 minutes. Serve chicken and sauce over rice. Yields about 1 cup of chicken and sauce and 1/2 cup of rice per serving.

4 servings - 6 Weight Watcher Points per serving.

Mona Lou's Dairy Potato Bake

2 lb bag diced hash browns, thawed
1/2 cup melted butter
1 tsp salt
dash of pepper
1/2 cup chopped onion
1 can Cream of Chicken Soup
12 oz sour cream
2 cups cheddar cheese - grated

Mix this whole mess together and pour into 8 x 10 cake pan. Top with 2 cups crushed corn flakes, drizzle 1/4 cup melted butter over and sprinkle with paprika.

Bake at 350 for 1 hour, or until after we've had one more.

Grandma C's Doughnuts

1 1/2 cups sugar
3 eggs
1 1/2 cups buttermilk
1/2 cup cream
1/2 tsp nutmeg
pinch of salt
1 tsp soda
1 1/2 tsps baking powder
a little vanilla
flour enough to roll (about 5 cups)

Beat eggs, add sugar, buttermilk and cream. add some flour, mixed with the baking powder, salt, soda & nutmeg sifted together. Mix well. Continue adding flour until thick enough to roll.

Roll, cut out and deep fry - eat!!!

Note from Mom: "I added a little cinnamon, too."

Dad's Clam Dip

1 can clams or shrimp, drained
1 cup sour cream
1/4 cup chili sauce
2 tsp lemon juice
1/4 tsp salt
1/8 tsp pepper
1 tsp horseradish
dash of tabasco sauce
